Bored with Cooking Club

This week's selections are a combination of two complementary recipes that we knew you would enjoy! The first recipe, Bethany Barfield sent to us after her Bunko club raved about the recipe. They wanted a copy and she knew our readers would enjoy it , too!

So many men and women love to cook but hate the hassle often associated with preparing a truly tasty meal. With the weather warming up, we knew that one step closer to an easy meal is getting out of the kitchen to prepare it, so we chose a grilled main course to recommend with the Cheesy Pineapple Salad sent in by Bethany. And nothing is more delicious with pineapple than ham or pork!
Cheesy Pineapple Salad
1 16 oz can pineapple chunks - drained, but
save the juice
3 tablespoons of pineapple juice
3 tablespoons of flour
½ cup sugar
1 cup shredded cheddar cheese
1 sleeve Ritz crackers
½ cup melted butter
Put pineapple in bottom of casserole dish.

Mix together juice, flour, sugar and pour over pineapple. Sprinkle cheese on top. Crush crackers, then mix with butter until well coated and spread on top. Bake at 350 for 20-30 minutes. Serve warm.
Quick and Easy Grilled Chops
1 pkg. smoked ham chops*
1 T dark brown sugar
1/4 cup nectarine or peach preserves
2 T cider vinegar
1 T mustard

In small bowl, mix brown sugar, preserves, mustard and vinegar well.

Trim fat from smoked chops. Brush with thick composition of brown sugar, preserves, mustard and vinegar. Allow to sit in fridge for as long as you can while briquettes prepare in grill or until you absolutely must expedite dinner! The longer the chops are allow to sit, the more they will benefit from the flavors of the glazing.

Remove chops from fridge, and let them warm to room temperature. Grill just until fully warmed (smoked chops are precooked).

Serve with pineapple salad... and enjoy!
