Bored with Cooking Club

So many men and women love to cook but hate the hassle often associated with preparing a truly tasty meal!

The Bored with Cooking Club is comprised of any and all readers who love to cook and want to share a favorite easy, quick - and still impressive and delicious recipe. This recipe for Cashew Chicken is tasty and sure to please! Instead of ordering take out because you are bone-tired and the family is hungry, try out this recipe.
Cashew Chicken
6 to 8 Chicken Breast (cut into bite size
pieces,salt&pepper to taste)
1 Egg
1 Large Can Evaporated Milk
1 Large Pkg. Cashew Nuts
9 Cups Chicken Broth
9 Tablespoons Corn Starch
6 Tablespoons Soy Sauce
5 or 6 Green Onions (if desired)

Beat Egg & Milk together, soak chicken pieces several hours or overnight. Drain, flour and fry in oil until brown, remove and drain.

Mix sauce(broth, corn starch, soy sauce, green onions). Simmer in sauce pan until thickened. Add fried chicken pieces to sauce. Add some of cashew nuts to sauce, reserve some to sprinkle on top. Serve hot over rice.

Note: is best if fixed several hours before serving to allow chicken pieces to absorb some of sauce.

Serves 6 to 8

If you don't have time to run to the store for fortune cookies, be a smart cookie and use the following recipe to complement the Chinese themed meal above.
Cheater's Almond Sugar Cookies
1 roll of Pillsbury Sugar Cookies
1 pkg sliced almonds

Slice the sugar cookies as directed and place on cookie sheet. Sprinkle a few slices of almond on the cookie tops, or arrange as flower petals if you feel particularly creative and energetic! If you have younger children, don't stick them in front of the television, drag them into the kitchen and encourage them to help you with the cookies. They can place them on the baking tray or add the almonds.

Bake according to directions, and serve warm to your family after the delicious Cashew Chicken. Family fun, family feast!
