Even appetizers can be quick and easy
The Bored with Cooking Club is comprised of any and all readers who love to cook and want to share a favorite easy, quick yet still impressive and delicious recipe.
The Olivita Crostini recipe below was contributed by Gulf Breeze News reader Robyn Philips. She loves fine food, yet counsels that this recipe is quick to prepare and sure to please. For those of you who balance work, kids, play and volunteer efforts like Robyn, you will be happy to add this one to your table! It's a great offering even for uninvited guests who drop by as you can whip it up quickly and keep most of the ingredients on hand. In medium bowl, stir together black and green olives, Parmesan cheese, butter, olive oil, and garlic until well blended. Stir in Monterey jack cheese and parsley. Heat broiler. Cut baguette into 24 thin slices. Arrange bread slices on baking sheets and spread some of the olive mixture on each. Broil 3 minutes to 4 minutes, or until bread is toasted at edges and olivita is bubbly.
