Surprisingly good meals can be easy

ZITI
. 3/4 lb. Italian sausage
.1 med. onion,
chopped
. 3 large garlic cloves,
chopped
. 1 28-oz. can diced peeled
tomatoes
. 1/4 cup pesto sauce
. 10 oz. ziti, cooked
. 10 oz. package of spinach
. 6 oz. mozzarella, cubed
. 1 cup Parmesan, grated
Cook sausage, onion and garlic about 10 min. breaking up sausage. Add tomatoes with juices to pan. Simmer until sauce thickens slightly, about 10 min. Stir in pesto. Season with S & P. Preheat oven 375. Prepare 13 x 9 baking dish. Combine pasta, spinach, mozzarella and 1/3 cup of parmesan in large bowl. Stir in hot sauce and transfer to baking dish. Sprinkle with remaining parmesan. Bake until sauce bubbles, about 30 min.
