A recipe for health nuts

Soothing Salad

A very refreshing salad. One bite and it may even calm the most hectic of working conditions.

HAWAIIAN APPLEPINEAPPLE SALAD

2 cups (4 small) cored, unpeeled and diced Granny Smith apples

1 (8-ounce) can pineapple tidbits, packed in fruit juice, drained

1 cup Cool Whip Lite

1 teaspoon coconut extract

2 tablespoons chopped dry-roasted peanuts

1/4 cup flaked coconut

In a large bowl, combine apples and pineapple. Add Cool Whip Lite and coconut extract. Mix gently to combine. Fold in peanuts and coconut. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. Makes 6 (1/2 cup) servings.

TIP: If you can't find tidbits, use chunk pineapple and coarsely chop.
